The Unsung Flame of Thai Fire
A Praise Poem for Chef Dylan Jones
In a land not of birth, but surely of soul,
An Aussie heart beats with Thai fish sauce in its bowl.
Not called, but lured by pestle’s chant,
By coconut’s cream and a heritage grant.
He came by way of kitchen fate,
With hands that slice, that pound, that wait.
Fresh cream he insists must be churned anew,
And pastes must echo ancestors’ view.
The shallots cry in oil’s soft haze,
While butchering beasts in olden ways.
He walks the edge where flavor sings—
Where salt is subtle, and spice has wings.
But taste alone was never the quest,
He fights for food systems at their best.
No shrink-wrapped meals, no fleeting trends,
But nature’s wisdom that never ends.
He treads the fields where rice roots lie,
Knows which grain thrives, which might soon die.
With farmers he talks of soil and seed,
Of biodiversity and culinary creed.
The salt fields whisper, the fishermen teach,
And knowledge flows beyond the beach.
He fillets with care, yet shares in return,
Building futures where flavors burn.
He learns the tones, the tongue, the text,
To honor the past and not perplex.
Old recipes, like ghostly art,
He reads, translates, and plays his part.
He jokes with fire, sips too long,
Yet wakes with the dawn like nothing’s wrong.
A philosopher-cook with utopian dreams,
Of kitchens that heal, not just fill with steam.
His path is more than palate’s delight,
It’s ecosystems kept in sight.
From forest herbs to ocean’s yield,
Each choice defends the farmer’s field.
He brews the unseen, the dish unsaid,
Feeds the future with crumbs he’s laid.
He teaches fishermen how to fillet,
And learns from them the tide’s ballet.
From Issan heat to Chiang Mai calm,
He seeks the wisdom in every palm.
No lover of mushrooms—but Lion’s Mane stands,
Proof of his humor in kitchen lands.
He’s the wind beneath the basil’s lift,
The quiet bearer of Bo.lan’s gift.
And though the spotlight often fades,
The soul of Thai food wears his shades.
So here’s to Dylan—no titles need call,
Without him, Bo.lan might not stand tall.
The balance of fire, of earth, of flame—
Thai cuisine, and a planet reclaimed.
