After the first five years of operating Bo.lan, Chef Bo and Dylan’s vision is clearly set on having a zero carbon footprint restaurant in Bangkok. We believe that activities related to the consumption and cooking of food greatly impacts our environment both in micro and macro-scape. Hence, we’ve imposed several environmetal-friendly policies.
We have stopped using bottled still water both local & imported, so as to minimize our single-use plastic waste. Instead, we have invested in a state of the art system to serve our own house-filtered water in glass bottles at Bo.lan. Through this activity, we not only reduce waste but also minimize the use of fossil fuel within the supply chain from the water source, to processing facilities and end consumers. Consequently we’ve reduced the amount of carbon dioxide released into our atmosphere. All the light bulbs fitted in Bo.lan are LED and consume less power.
In the future, we plan to have solar panel connect to offset/reduce our dependency on mains electricity. We are determined to reduce the amount of waste entering Bo.lan by avoiding unnecessary packaging when making purchases. For the packaging that makes its ways into Bo.lan, we make sure that it is recycled properly. Different bins are assigned for paper, plastic, glass and organic waste. At Bo.lan, we produce a fair amount of waste, espeacially organic waste. Consequently, we turn our organic waste into fertilizer and eventually, methane gas. We have installed a grey water system by utilizing our wastewater from the kitchen for our garden as well as guests amenities. We have also installed a Heat pump to generate hot water and also assist in the cooling of the restaurant.
